My contribution to this tasty round up are my Fried Mac n Cheese Bites. The idea for these came from trying to reinvent my Thanksgiving leftovers. After the Thanksgiving sandwiches, quesadillas & crunchwraps, I still had mac n cheese on my hands. So why not make little balls and fry them up?
And man oh man are they tasty!
Fried Mac n Cheese Bites
Ingredients:
3-4 cups leftover mac n cheese
2 eggs
1 1/2 cup panko breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon Italian seasoning
3 cups frying oil (vegetable, canola or grapeseed oil will do)
Flaky sea salt to finish
Method:
Beat eggs in a small bowl
Combine panko breadcrumbs and seasoning in a small bowl
Start with cold mac n cheese, a thicker cheese sauce will be best for this recipe
Roughly chop the mac n cheese
Using a cookie or ice cream scoop, tightly pack a scoop of mac n cheese into a ball
Gently dip in egg mixture and then panko mixture
Place on a plate and freeze for at least 30 minutes
Heat frying oil in a small saucepan to 350 degrees
Fry in batches as needed until golden brown
Transfer to paper towel lined plate and sprinkle with flaky sea salt
Now let's get to the other ladies' appetizers!
