Looking for a quick, flavorful, weeknight dinner? I've got a good one for you! These lettuce cups are so tasty, you may want to double this recipe. Also feel free to sub any type of ground meat you have on hand! Also feel free to serve this over rice in lieu of lettuce cups for a more hearty meal or to mix it up for leftovers.
Ground Turkey Lettuce Cups
Ingredients:
2 tablespoons sesame oil
1 pound ground turkey
1/2 onion finely diced
1 red bell pepper finely diced
1 5oz can water chestnuts, drained and finely diced
1 tablespoon garlic
1/2 tablespoon ginger
2 tablespoons rice vinegar
1/4 cup low sodium soy sauce
1/3 cup hoisin sauce
1 tablespoon sriracha
1 head of bibb lettuce (can sub romaine or iceberg)
Garnish: scallion greens and sesame seeds
Method:
Heat sesame oil in a medium sized skillet over medium high heat
Brown turkey and crumble for 3-4 minutes until almost all pink is gone
Add onion, bell pepper, water chestnuts, garlic and ginger, sauté for 5-6 minutes until onion is translucent
Reduce heat to low, add rice vinegar, soy sauce, hoisin sauce and sriacha
Stir to combine and serve on lettuce cups
Garnish with scallion and sesame seeds

Hi Kristin - I just made this dish and added some diced celery for health and crunch too! It turned out really well and was worth investing in the staple Asian ingredients I didn't have before. Way better than pre-made preservatives! My sauce did turn out a bit thin. Is that normal? The first lettuce cup was messy and runny but then I learned to drain out a bit of the sauce from my spoon. Could I add cornstarch to thicken the sauce next time? Thank you for sharing.
